Who is Greg Judy?
Greg and Jan Judy of Clark, Missouri turned near-bankruptcy in 1999 into a debt-free operation spanning 22 farms (owned and leased), grazing South Poll cattle, St. Croix hair sheep, and Shiitake mushrooms. Greg has written three books on regenerative grazing, most recently "Greg Judy's How to Think Like a Grazier," detailing the custom grazing and holistic high-density methods that built their operation from scratch. Greg teaches planned grazing, multi-species grazing, and land leasing at schools and events across the US, Germany, England, New Zealand, and Canada, and the Judys host spring and fall grazing schools plus an internship program at their farm.

A truly regenerative event isn't complete without local, regenerative food. We're not just talking about growing nutrient dense food that's good for the soil, we're eating it! By incorporating nutrient dense proteins, veggies, grains, and fruits the meals served are healthful, delicious and truly regenerative.
Featured proteins include pork from Chad and Dawn Christianson of Back to Nature Farms in Fremont, Nebraska and beef from Jessica Swanson of Walnut Range Farms in Alma, Nebraska. Many of the fruits, veggies, grains and dairy products are also sourced from regenerative and local farmers as well. We like to say you'll never leave a Green Cover event hungry, and if you do it's your own fault!
